Egg White jalapeno Yellow Squash Muffins w/ scallions & Tomato Ring

Ingredients:

10 Egg Whites3 Chopped scallions
1/2 red or green pepper
1 Jalapeno, chopped rough
2 Small Yellow squash, shredded
1/2 Teaspoon favorite herbs or basil
1/4 Teaspoon oregano or other choice of herb
Sprinkle of sea salt and pepper
1/2 Medium Tomato sliced in thin slice
1 Teaspoon coconut oil mixed and beaten into egg mixture

Perfect for:  Need a fast breakfast on the run.  Make these up night before and pop in the oven in the morning when you wake for a delicious and nutritious breakfast option, they only take 30 minutes to cook. Loaded with protein, low fat, low sodium and low calorie.

Directions:

Preheat oven to 375.  Coat muffin tin with spray and set aside.  Combine veggies in bowl.  Fill each muffin cup about 2/3 full.  Beat eggs and herbs in bowl.  Use 1/3 cup per muffin cup.  Scoop egg mixture and fill each muffin tin to the top.  Bake for 20-30 minutes, until they rise and are golden.
