10 Egg Whites3 Chopped scallions
1/2 red or green pepper
1 Jalapeno, chopped rough
2 Small Yellow squash, shredded
1/2 Teaspoon favorite herbs or basil
1/4 Teaspoon oregano or other choice of herb
Sprinkle of sea salt and pepper
1/2 Medium Tomato sliced in thin slice
1 Teaspoon coconut oil mixed and beaten into egg mixture

Preheat oven to 375. Coat muffin tin with spray and set aside. Combine veggies in bowl. Fill each muffin cup about 2/3 full. Beat eggs and herbs in bowl. Use 1/3 cup per muffin cup. Scoop egg mixture and fill each muffin tin to the top. Bake for 20-30 minutes, until they rise and are golden.
