Lentil Cauliflower & Peas w/ a jalapeno sweet potato relish

Ingredients:
2 Cups soaked Lentils1/3 Head of cauliflower
2 Cups soaked peas
1 Sweet potato chopped into square chunks
1/4 Red Onion rough chopped
2 Stalks Celery, rough chopped
1 Jalapeno, sliced thin
sea salt and pepper to taste
1 Teaspoon coconut oil
Directions:
In a pot take soaked and rinsed lentils and add 3 cups purified water. Bring to boil then reduce to a simmer. In a second pot take rinsed and soaked peas also add 3 cups purified water to these. Bring to boil then reduce to a simmer until tender. In a third pot take teaspoon of coconut oil, add chopped onions and celery. Once they get golden brown, add chopped sweet potato and 3 cups of purified water. Bring to a boil then simmer and reduce.
Once all three are made and completed. Take lentil cauliflower mixture and place in a ring on the plate. Then add a ring of peas, then add the simmer sweet potato and celery mixture. Top with fresh jalapenos.
Note: Ideally you get all these flavors in one bite and they all compliment one another.
