Chili Sweet Potato Stew

4 Cups Purified Water1 Stalk Celery, chopped
2 Cloves Garlic, chopped
1 Bay Leaf
1 Thyme Sprig, whole & 2 Tblsp.  Thyme, chopped
1/4 Cup Olive Oil
1 Medium Onion
1/4 Cup whole wheat flour
4 Cups sweet potato, diced
2 Cups Tofu, chopped2 Cups Tomatoes, chopped
1 Medium Avocado, chopped
1/4 Cup Cilantro, chopped
2 Tablespoon lime juice & lime for garnish
Cayenne pepper to taste


Bring water, celery, garlic, bay leaf, and thyme to boil in large pot.  Cover reducing to low heat.  Then simmer for 10 minutes.  Transfer to large bowl.  Heat oil in same pot over low heat.  Saute onions 6 minutes until golden.  All flour, cook stirring constantly.  Keep stirring until smooth and dry.  Then add broth blending with flour.  Stir in sweet potatoes and thyme.  Raise heat to medium low simmering 20 minutes.  Add tofu, cook on low for 7 minutes stirring frequently.  Put in bowls and top with tomatoes, avocado, cilantro, lime juice and cayenne.
