Honey Banana Almond Oatmeal Pancakes

Ingredients

2 Cups organic oatmeal
1 cup almond milk
2 cups purified water
6 Tablespoons ground flaxseed with 3 Tablespoons hot water
1/2 Cup organic whole wheat flour
3 Tablespoons honey
2 Teaspoons Vanilla
2 Teaspoons Ground Cinnamon
1 1/2 Teaspoon baking soda
1/4 Teaspoon sea salt
Fresh organic maple syrup
Banana, sliced
Raw Organic Walnut pieces

Directions:

Mix water, almond milk and oats in bowl.  Cover and refrigerate 8 hours overnight.  In a separate bowl mix egg, flour, honey vanilla, cinnamon, baking powder, and sea salt into oatmeal mixture. When ready to cook coat pan or griddle with non stick cooking spray.  On medium heat pour 1/3 cup batter for each pancake.  Cook 3 minutes or until bubbles form, then flip cooking 1-2 minutes.  Top with fresh bananas, walnuts and maple syrup.

This breakfast is a wonderful chameleon to flavor.  Change the bananas to fresh seasonal berries and you have another delicious variation.  The combination toppings are endless.  Yum eat and create your favorites.
